Brown
Rice
1 cup rice
Pinch of sea salt
2 cups water
Rinse
and drain. Place water, sea salt and rice in pot and bring
to a boil. Turn heat to low, place lid on pot, and simmer
(do not stir) for 45-50 minutes or until all the water is
absorbed.
White
Rice
1 cup rice
Pinch of sea salt
1 ½ cup water
Rinse
and drain. Place water, sea salt and rice in pot and bring
to a boil. Turn heat to low, place lid on pot and simmer
(do not stir) for 15-20 minutes or until all the water is
absorbed.
Wild
and Brown Rice Mixture
1 cup rice
Pinch sea salt
3 cups water
Rinse
and drain. Place water, sea salt and rice in a pot and bring
to a boil. Turn heat to low, place lid on pot and simmer
(do not stir) for 50-60 minutes or until all the water is
absorbed.
Millet
1 cup millet
Pinch of sea salt
2 ½ cups water
Rinse
and drain. Place water, sea salt, and millet in a pot and
bring to a boil, turn heat to low and simmer for 20-25 minutes
or until all the water is absorbed.
Option: Dry toast millet in saucepan until it smells nutty
then follow the same instructions.
Pearled
Barley
1 cup barley
Pinch of sea salt
3 cups water
Place water, sea salt, and barley in a pot. Bring to a boil
and simmer 60-75 minutes or until water is absorbed.
Quinoa
1 cup quinoa
Pinch of sea salt
2 cups water
Rinse
and drain thoroughly with warm water. Place water, sea salt,
and quinoa in a pot and bring to a boil. Turn heat to low,
place lid on pot and simmer 15-20 minutes or until all the
water is absorbed.
Rolled
Oats
1 cup oats
Pinch of sea salt
2 cups water
Place
water and sea salt in pot and bring to a boil. Add oats,
bring to a boil, turn heat to low and place lid on pot and
simmer for 15-20 min, or until all the water is absorbed.
Steel
Cut Oats
1 cup oats
Pinch of sea salt
4 cups water
Place
water and sea salt in a pot and bring to a boil. Add oats,
bring to a boil, turn heat to low and place lid on pot and
simmer for 30-40 minutes, or until all the water is absorbed.
Brown
Rice Cereal
1 cup brown rice cereal
Pinch of sea salt
2 cups water
Place
water, sea salt and cereal in pot and bring to a boil. Turn
heat to low, place lid on pot and simmer for 20 minutes.
Seven
Grain Cereal
1 cup seven grain cereal
Pinch of sea salt
2 cups water
Place water, sea salt and cereal in pot and bring to a boil.
Turn heat to low, place lid on pot and simmer for 15-20
minutes.
Polenta
1 cup polenta
½ tsp salt
3 cups water
Place water in a pot and bring to a boil. Add salt and slowly
add polenta, whisking continuously. Turn heat to low, stirring
often for 20-25 minutes or until mixture thickens. Pour
into an oiled loaf pan, and chill in refrigerator for at
least 2 hours. Slice and serve.
Whole
Wheat Couscous
1 cup couscous
Pinch of sea salt
1 cup water
A few drops of olive oil
Place
water and sea salt in a pot and bring to a boil. Add couscous,
place lid on, and remove from heat. Let stand 5-10 minutes.
Fluff with fork and mix in oil before serving.
Whole
Wheat Pasta
8 oz. whole wheat pasta
Pinch of sea salt
A drop of olive oil
Place
water and salt in a large pot and bring to a boil. Add pasta
and simmer for 10-15 minutes. Rinse in colander and add
olive oil.
Semolina
Pasta (bow ties, veggie spirals, spaghetti)
8 oz. semolina pasta
Pinch of sea salt
Drop of olive oil
Place
water and salt in a large pot and bring to a boil. Add pasta
and simmer for 8-10 minutes. Rinse in colander and add olive
oil.
Rice
Pasta
8 oz. rice pasta
Pinch of sea salt
Drop of olive oil
Place
water and salt in a large pot and bring to a boil. Add pasta
and simmer 5-8 minutes. Be careful not to overcook. Rinse
in colander and add olive oil.
Wheat
Berries
1 cup wheat berries
Pinch sea salt
3 cups water
Soak
berries overnight in 3 cups water in a saucepot. In same
pot with the soaking water, add sea salt and bring to a
boil. Lower heat, place lid on and simmer for 45-50 minutes.
TVP
4 ounces TVP
8-10 ounces water
Add
water to tvp and let sit for 2-3 minutes, or until water
is absorbed. Season and use as a ground meat substitute.
Popcorn
1 cup popcorn
1/3 cup unrefined safflower oil
In
a 4-quart pot, pour in enough popcorn to cover the bottom.
Add a bit of the oil, place lid on and heat on medium heat
until a first kernel pops. Add the rest of the popcorn and
oil, place lid on and heat until popping slows. Remove from
heat and let sit until all the popping stops.
French
and Green Lentils
2 cups lentils
2 teaspoons salt
4-5 cups water
1 strip kombu (optional)
Rinse
and drain. Place water, kombu, and beans in pot and bring
to a boil. Turn heat to low, place lid on, and simmer 45-50
minutes. Add salt.
Red
Lentils
2 cups lentils

minutes. Add salt.
Split
Peas

Adzuki
Beans
